Day 11

Breakfast – Breakfast Sammich and Fruit

I decided it had been a VERY long time since I’ve had anything resembling a breakfast sandwich. And I’ve never had a traditional one because they seem SO awful for you, only ones I’ve made at home. But not since being vegan. So I veganized a healthy one! It’s an onion-poppyseed sprouted wheat bagel with Tofutti’s Better Than Cream Cheese, a tofu version of eggs from a modified recipe, and Gimmie Lean sausage mixed with a teaspoon of maple syrup, then cooked in a skillet with all-natural cooking spray. (Same way the tofu eggs were cooked, btw.) I ate it with cantaloupe and blueberries. It was AWESOME. I love how vegan substitutes taste amazing and yet are often 90-billion times healthier for you than what they’re replacing. It makes eating much more fun and delicious.
Lunch – Stuffed Shells and Zucchini
I watched the stuffed shells disappearing right before my eyes and figured I better grab three for lunch or it was going to be too late. (Because I’m a genius, I set aside 8-10 shells last night in a small dish, all prepared to be cooked, and froze ‘em. Now I can just pop them in the oven some time and have them again!) So I paired them with thinly sliced organic zucchini which got loads Italian spices dumped on it and then it was cooked in a pan with cooking spray. And it was outstanding.
Dinner – Frozen Meal and Microwave Heaven

Right. So. I got a vegan “Indian Samosa” wrap from Amy’s, frozen. Three minutes in the microwave for that, a few minutes more for leftover brown rice from last night, then I chopped some peaches and pears, dumped them on the rice, and topped the fruit with curry powder. (I can’t eat peas in anything other than Indian food, I’ve decided…) Anyway, it was fucking YUM and it took under 10 minutes to make, plate, and photograph. Life doesn’t get much better than that. Well, yes it does. But shhhh.
